Happy Anniversary!

t has been four of year today. Time fly so fast. It is like just a glance. :) February is our big month. Me and my hobby's birthday, anniversary and my father-in-law's birthday are all in this month.





This is first time I try to make a cake for our Anniversary. I am not good in baking although I love to. Most of time I failed. Couple of experiences made me feel very frustrated so I did not bake often. However, this time I think it turns out very good - soft and consistency. Look still not very good because it cracked in the top surface. I don't why!?? I still glad to make it for our anniversary.

I found this recipe in the Hershey's Kitchens website - Easy Chocolate Layer Cake. One of reason I use this recipe because I out of my milk ^____________^ ||| So I need to find some recipe which does not need milk. Also, just like the name "Easy". I love easy!

Below is the recipe for you if you want to make one. When I melted chocolate bar, I boiled a pot of hot water, put chocolate bar on the top of hot water with a classes bowl. I think this way should be better. I tried to use microwave, it took longer time and did not look right (to me!) Also I put the wrong one wrong ingredient - "baking power!!!". I should put baking soda, but I put baking power for mistake. I was so panic because I don't know how can I to fix it. Anyway, it's like nothing happened. :) Lucky me!!


:: Easy Chocolate Layer Cake from Hershey's Kitchens

Ingredients:
- 2 packages (4 oz. each) - Hershey's special dark chocolate premium baking bar, broken into pieces.

- 3 cups all-purpose flour
- 1-1/2 cups sugar
- 2 teaspoons baking soda

- 1 teaspoon salt
- 2 cups water
- 2/3 cup vegetable oil
- 2 tablespoons white vinegar
- 2 teaspoons vanilla extract

Directions:
1. Heat oven to 350F. Grease and flour two 9-inch round baking pans; line bottoms with wax paper.

2. Place chocolate in small microwave-safe bowl. Microwave at Medium (50%) 1 - 1/2 to 2 minutes or until chocolate is melted; cool slightly.

3. Stir together flour, sugar, baking soda and salt in large bowl. Add melted chocolate, water, oil vinegar and vanilla; beat on medium speed of mixer until well blended. Pour into prepared pans.

4. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cook completely. Frost as desired. 10 to 12 servings.

  1. Hello Terri! Congratulations on your anniversary! Give Dewey a little pat on the back, too! I love the Annie doll that you sold. You will have to try the Hershey hot water cake recipe -- it is REALLY easy and the only chocolate cake we ever make...and frost with cream cheese frosting. Remember, when you don't have milk...we have Keisha, the milk cow! Fresh milk and cream!
